Preheat the oven to 425°F. Bring a large pot of salted water to a boil.
Add the diced potatoes to the boiling water and cook for exactly 5 minutes. Drain and let sit in the colander for 2 minutes to release excess moisture.
In a large bowl, toss the drained potatoes with olive oil, melted butter, ranch seasoning, garlic powder, smoked paprika, and black pepper until evenly coated.
Spread the seasoned potatoes in a single layer on a rimmed sheet pan. Roast for 20 minutes.
Remove the pan, scatter the sliced sausage over the potatoes, and toss together. Return to the oven for 15–18 minutes, until the potatoes are golden at the edges and the sausage is browned.
Sprinkle the shredded cheddar evenly over the top. Bake for another 3–5 minutes, until fully melted and starting to bubble.
Drizzle with sour cream and top with sliced green onions. Serve immediately.
