Foolproof Cheesecake Bread

Cheesecake bread swirls a real cream cheese cheesecake layer through a buttery vanilla loaf, topped with a graham cracker crumble — tested four times so the center sets clean instead of sinking.

Ingredients

For the Bread Batter:

  • 13/4 cup all-purpose flour
  • 11/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sour cream, room temperature
  • 1/4 cup (60ml) whole milk, room temperature

For the Cheesecake Layer:

  • 8 oz full-fat cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour

For the Graham Crumble Topping:

  • 1/3 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter, melted

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Beat the cream cheese and sugar together until smooth, about 2 minutes. Add the egg, vanilla, and flour, and beat just until combined. Chill in the fridge for 10 minutes.
  • Whisk together the flour, baking powder, baking soda, and salt in a bowl. Set aside.
  • Beat the softened butter and sugar until pale and fluffy, about 3 minutes. Add the eggs one at a time, then the vanilla.
  • Add the dry ingredients in three additions, alternating with the sour cream and milk, starting and ending with the dry ingredients. Mix just until combined.
  • Pour half the bread batter into the prepared pan. Spoon the chilled cheesecake layer evenly over the top. Dollop the remaining batter over the cheesecake layer.
  • Run a butter knife through both layers in a zigzag motion, 6–8 passes, to create a marbled swirl.
  • Stir together the graham cracker crumbs, sugar, and melted butter, and sprinkle evenly over the top.
  • Bake for 55–65 minutes, until a toothpick inserted into the bread portion comes out clean and the center springs back slowly when pressed.
  • Cool in the pan for 20 minutes, then transfer to a wire rack and cool completely, at least 2 hours, before slicing.

Notes

  • Bring all refrigerated ingredients to true room temperature before starting — cold ingredients are the most common cause of a streaky, unmarbled swirl.
  • The cheesecake layer must chill for 10 minutes before swirling; skipping this causes it to sink to the bottom of the loaf.
  • Don't skip the tablespoon of flour in the cheesecake layer — it's what keeps the layer structurally stable during baking.
  • Store in the refrigerator, not at room temperature, due to the cream cheese layer.
  • The texture improves on day 2, once the cheesecake layer has fully set and chilled.
  • Freeze individual slices wrapped tightly in plastic and foil for up to 2 months; thaw overnight in the fridge.
  • If the top browns too quickly before the center sets, tent loosely with foil and continue baking in 5-minute increments.
  • A warm, dry knife (run under hot water and dried between cuts) gives the cleanest slices without smearing the swirl.
