Ingredients

For the corn:

  • 4 cup frozen corn kernels, thawed and thoroughly dried
  • 2 tablespoon unsalted butter
  • 2 fresh jalapeños, diced (seeds removed for milder heat)
  • 1/2 teaspoon kosher salt, divided

For the sauce:

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  • Melt the butter in a large skillet over medium-high heat until fully melted and bubbling.
  • Add the dried corn in a single even layer. Do not stir.
  • Let the corn sit untouched for 7–9 minutes, until a good portion of the kernels are deeply golden-brown.
  • Stir once, scraping up any browned bits from the bottom of the pan.
  • Add the diced jalapeño and cook for 1–2 minutes, until slightly softened.
  • Remove the pan from the heat completely.
  • Stir in the mayonnaise and sour cream until every kernel is coated.
  • Fold in the cotija cheese, lime juice, cilantro, chili powder, and smoked paprika.
  • Taste and adjust salt and pepper as needed.
  • Transfer to a serving bowl and serve warm.

Notes

  • Dry your corn thoroughly before it hits the pan — even a little extra moisture will prevent charring and cause the corn to steam instead.
  • Jalapeño heat varies significantly by pepper. Taste a small raw piece before adding it to gauge the spice level.
  • This corn keeps well refrigerated for up to 4 days and actually tastes better on day two as the flavors settle.
  • Freezing is not recommended — the mayonnaise-based sauce separates and turns watery after thawing.
